Weekend breakfast is one of my favorite parts of Saturday and Sunday mornings. My husband loves pancakes, but I don’t love hovering over the stove watching him eat his share while I wait for my pancakes to cook. And so, this Kodiak Cakes pancake recipe was born!

Oven pancakes are one of my go-to foods for family breakfasts and weekly meal prep. They are versatile and easy to prepare. This Kodiak Cakes pancake recipe ensures you can enjoy breakfast with the rest of the family rather than flipping those cakes one by one. Quite literally, this is a pan-cake recipe! 🙂

This is oven-baked pancake recipe is packed with 12 grams of protein per serving. Compare that to a standard pre-packaged pancake mix which typically ranges between 3-5 grams per serving.

The final product can be enjoyed hot or cold, straight from the oven or refrigerator. Serve plain or with sugar-free maple syrup and a side of fresh fruit.

Kodiak Cakes Pancake Mix

For this recipe, I used the buttermilk Kodiak Cake Power Cakes Flapjack & Waffle mix^. I prefer the Kodiak Cakes Power Cakes mix for this recipe because it isn’t as sweet compared to some of the other flavors, and the protein content is a smidge higher.

My Kodiak Cakes Blueberry Muffin recipe is another one of my favorites that uses the Power Cakes pancake mix. Only 165 calories and 7 grams of protein per muffin.

Kodiak Cakes Gluten-Free Mix

Kodiak Cakes makes several high protein pancake and waffle mixes including a gluten-free flapjack and waffle mix^. By swapping the gluten-free Kodiak Cakes mix, this recipe would indeed make the perfect high protein, gluten-free pancake recipe. No flipping required!

Compared to the Power Cakes mix, the gluten-free Kodiak mix is lower in protein, by about half in fact. One 1/2 cup serving of the gluten-free mix is 6 grams of protein compared to the Power Cakes which is 14 grams per 1/2 cup serving.

With a few other staple pantry ingredients, this recipe can be prepared in 10 minutes or less. Swap blueberries for other fruit such as a sliced banana or strawberries. Or omit fruit for a plain oven protein pancake recipe.

What I love most about this Kodiak Cakes pancake recipe, it that it can be served hot or cold and makes a fantastic breakfast or portable snack. Once cooled, store in an airtight container in the refrigerator for up to 4 days.

Ingredients

  • 2 cups Kodiak Cakes Flapjack & Waffle Mix
  • 1/4 cup brown sugar packed
  • 1 tsp baking powder
  • 2 large eggs
  • 1/4 cup coconut oil melted
  • 1/2 cup non-fat plain Greek yogurt
  • 1 cup skim milk
  • 2/3 cup blueberries optional

Instructions

  • Preheat oven to 375F. Coat a 9 x 13-inch baking pan with non-stick cooking spray; set aside.

  • In a large mixing bowl, whisk Kodiak Cakes Flapjack & Waffle Mix, brown sugar, and baking powder.

  • Add eggs, melted coconut oil, Greek yogurt, and milk to dry ingredients; mix until just combined.

  • Pour mixture into prepared baking ban. Sprinkle with blueberries and bake for 20 minutes, until an inserted toothpick comes out clean.
