Cashew Cookies

This is a cookie which i made long back when i made my nan khatai recipe. It turned out to be delicious and buttery.

Eggless Cashew Biscuits Recipe with step wise pictures. Delicious cashew cookies which taste so delicious with a cup of tea or coffee. This is a crunchy eggless cashew biscuit which is totally yum. I had a bunch of cashews lying in the fridge which was so not so good when had on its own. So i used it in baking recipes. Both of them was a hit. Will be soon making different flavours using this same base.

You just need a handful of ingredient to make this cookie, i added cashews in them, but you can add any nuts you wish. Pista, walnuts would be great too. And instead of flour, you can use wheat flour too.

Ingredients for Cashew Cookies Recipe

  • All Purpose Flour / Maida - 1.5 cup / 180 grams
  • Sugar - ½ cup / 100 grams powdered
  • Unsalted Soft Butter - 100 grams
  • Cashews - ½ cup chopped
  • Vanilla Essence - 1 tsp
  • Salt - ¼ tsp
  • Milk - 1 to 2 tbsp

(My 1 cup measures 240 ml)

Ingredients

  • 1.5 cup All Purpose Flour / Maida 180 grams
  • ½ cup powdered Sugar 100 grams
  • 100 grams Unsalted Soft Butter
  • ½ cup Cashews chopped
  • 1 tsp Vanilla Essence
  • ¼ tsp Salt
  • 1 to 2 tbsp Milk

Instructions

  • Preheat oven to 180 Degree C. Line a baking sheet with parchment paper or foil. Set aside.

  • Take butter, sugar, salt, vanilla in a bowl and whip till creamy.

  • Add in flour, cashews and mix well.

  • Add in milk and make it into a soft dough.

  • Take small portion of dough, shape it into balls.

  • Place a cashew in the center, arrange it in a foil or parchment lined baking tray and bake for 14 to 15 mins.

  • Remove it and let it cool down completely.

  • Store in a air tight container.

Ingredients for Cashew Biscuits

  • Unsalted Butter - ¼ cup50 grams
  • Powdered Sugar or Icing sugar - ½ cup100 gram
  • Vanilla Extract - 1 tsp
  • All Purpose Flour / Maida - ½ cup
  • Custard Powder - ¼ cup
  • Baking Powder - ¼ tsp
  • Salt a pinch
  • Cashews - ½ cup chopped finely

How to Make Cashew Biscuits

  • Preheat oven to 180 degree C.
  • Take butter, sugar and vanilla. Mix well.
  • Add in custard powder, flour, baking powder and salt. Add in cashews and mix well. Mix to a form a dough.
  • Take a small portion, roll it into a ball. flatten it and place on a baking pan.
  • Bake for 12 to 15 mins. Remove and cool completely.
  • Serve.

    hi, if i want to make more cookies at a time, can i place another tray at the top or bottom rack of the oven instead of baking a batch after another

    @poornimaif u can keep two tray in your oven u can do that, just interchange the tray half way through the baking time so it bakes evenly

    Hi Arthi,
    Followed the same procedure, Oven had no 180 so used 170 in conv mode for 10min. Initially the cookies were very soft and tasty, on leaving it to cool it became very hard and unable to eat. Any ideas why

    Thank you so much for this recipe.My friends and family cannot get enough of them. I added orange zest and glace ginger and made them a little flatter. They were crispy on outside and a bit chewy inside. Very yummy and pretty with the cashew pressed on top. I look forward to trying other recipes of yours. I'm glad I found your site. Ta hi.

    It looks really tasty. I would definitely try it. But as i read tge comments some said the cookies went hard when cooled. What can be the reason behind that. Can u please suggest so that i can ensure that i dont do that mistake.

      You have bake it less, it will look soft when you take. But it will harden as it cools. So bake mentioned time or even less and check

    Looks delicious. Here’s a tip to form cookies — works well. Form dough into 1 inch log. Cut into pieces, then form into rounds. Easy way to end up with uniform cookies.
